italian Parsley, Minced. . . .1 Bunch Garlic Clove, Minced. . . 1 Mint Leaves, Minced. . . 24 Salt And Pepper Artichokes, Trimmed, Hairy Chokes Removed. . . . 8 Extra-virgin Olive Oil. . . . 1/ 4 Cup
Preparation:

preheat The Oven To 325o.
Combine The Parsley, Garlic, Salt, And Pepper.
Stuff The Cavity Of Each Artichoke With The Herb Mixture.
Place In A Roasting Pan, Upside Down, And Add ½ Cup Of Water And The Olive Oil.
Bake For 1 Hour.
Serve Hot Or At Room Temperature.
